Chorizo Criollo

The chorizo criollo is the obligatory start to any Argentine asado: juicy, savoury and with just the right hit of spices that makes it unmistakable. Authentic Argentine-style fresh sausage, perfect for the choripán to kick things off.

How to cook it: on the grill, medium heat and no rush, turning it often so it cooks evenly and doesn't burst. When it's golden and firm, it's done. A tip: prick it just lightly to release a little fat, never too much. It's also great on a hot pan.

Perfect for: the choripán with chimichurri to start, or as the first bite while the rest of the asado cooks.
