Meat for a family meal
Cuts that go a long way, cook without you hovering and feed the whole table. With leftovers for the week.
How much to buy for the table
For a family meal, work on 300 to 350 g of meat per adult and half that per child. With sides, salads and bread, that usually leaves a bit over — and having leftovers is no bad thing.
For a table of six that comes to around 1.8 kg. It's worth buying one whole piece rather than separate portions: it's cheaper per kilo, it cooks evenly and you carve it at the table, which keeps it beautifully tender.
Meat for the oven
Whole pieces that cook themselves and get carved at the table.

Stewing cuts, for the long Sunday
Stews, braises, pulled meat. These are the cuts with the most work in them — more connective tissue, more bone — so they need time and liquid, but they end up the tastiest and the cheapest per kilo.
The rule is always the same: low heat, lid on, two hours minimum. There's no way to rush it, and no need to stand over it either.
Cuts for the pot
Long cooking and plenty of flavour from the fat. Perfect for stews and braises.
